Rainbow Chard
Heat a TBS of Oil until its shiny
Dump in your chard ribs that you have chopped down
After two minutes add the chopped leaves.
Sauté until desired texture.
Sprinkle with salt and balsamic vinegar! Yum!
Crusty Roasted cauliflower
Heat oven to 400 degrees
While it’s heating, separate the florets of one head of cauliflower.
Save the outer leaves and core for veg stock in the freezer or the compost pile.
Put 2 tablespoons of vegan mayonnaise, and some Sriracha or hot sauce in a bowl and mix it up.
Add the florets, toss to coat.
Spread it out evenly on a baking sheet lined with parchment.
Sprinkle whole wheat, Panko breadcrumbs on top.
Roast in the oven about 15 minutes or until you see them start to turn dark brown in spots.
Serve immediately.
